One of the most loved of Thai foods has to be Phad Thai, which simply means Thai style fried noodles.
Phad Thai can be found being sold by street vendors all over Phuket and once you’ve tried it you can see why the dish is so popular.
Here is a simple recipe that you can try at home,if you don’t eat shrimps they can be replaced with chicken, pork or vegetables.
6 tsp soya bean oil
1 egg
6 shrimps
150 grm rice noodles
50 grm bean sprouts
4 tsp tamarind sauce
2 tsp fish sauce
2 tsp sweet pickled turnips
2 tsp chopped spring onion
2 tsp chopped fried tofu
½ tsp sugar
To Garnish
2 spring onions
Bean sprouts
Chopped peanuts
Half a lemon
Cooking Method
Heat 4 tsp of oil in the wok until hot
Add the egg and stir for about a minute
Add the shrimps and fry for a further 2 minutes
Add the noodles and a further2 tsp of oil and fry until the noodles are cooked
Add the fish sauce, tamarind sauce, chopped spring onion, bean sprouts, sweet pickled turnips, chopped fried tofu and sugar and heat for a further minute or 2.
Serve with additional bean sprouts, spring onions, lemon and peanuts on the side.
