Recipe – Thai Red Curry with Roasted Duck and Pineapple
Thai Red Curry with Roasted Duck (Kaeng Phed Ped Yang) is a popular Thai curry which can be found in Thai restaurants all around the world.

Ingredients
Vegetable oil 1 Tbs
Red curry paste 80 grm
Duck breast 120 grm
Coconut milk ½ can
Pineapple ¼ pcs
Kaffir lime leaves sliced 5 grm
Red chili sliced 10 grm
Cherry tomato 50 grm
Small egg plant 80 grm
Sweet basil leaves 5 grm
Fish sauce 2 Tbs
Sugar 1 Tbs
Cooking method
Heat the oil in a wok until smoking
Add the red curry paste and heat until the past gives off an aroma
Add half the coconut milk and bring it to boil
Add the duck and stir continuously for 2 minutes
Add the tomatoes, pineapple, egg plant, lime juice and kaffir lime leaves
Season with sugar and fish sauce as desired
Let it simmer 3-5 minutes and then add the red chili and basil leaves and remove from the heat
Serve hot with steamed rice
