Wagyu beef carpaccio and black truffle, terrine of duck liver, figs compote and truffle balsamic cream
Carpaccio di manzo Wagyu al tartufo nero invernale, terrina di fegato d’oca con composta di fichi e crema di balsamic al tartufo

Starter

Soft polenta topped with roasted baby squids, prawns and broad beans

Middle Course

Home made egg pasta ravioli agnolotti stuffed with burrata cheese in rabbit ragout scented with rosemary

Main Course

Shank of baby lamb slow cooked in Barolo wine and spiced lard, saffron and cauliflower mush, stew of brown lentils
Stinco di agnello giovane brasata al Barolo and lardo aromatizzato, con purea di cavolfiore e zafferano, e stufato di lenticchie di Castelluccio

Lemon and passion fruit sorbet

Seared scallops and fava beans with cured pancetta and aged pecorino cheese
Capesante scottate, con vellutata di fave, pancetta e pecorino stagionato

Middle Course

Bouchot mussels consommé with saffron and salted cod fish in Taggiasche olives crust
Zuppetta di cozze Bouchot e zafferano con merluzzo salato in crosta di olive Taggiasche

Main Course

Gran warm crustaceous (Lobster, Tiger prawns, Homard, Langustine) salad on a cannellini beans and rosemary volouté with confits vegetables
Gran arrosto di crostacei (Aragosta, gamberoni, astice, scampi) su velluatata di fagioli cannellini e rosmarino
