During the event Su-Mei Yu outlined the basics of her culinary philosophy and the ancient Thai methods of using food to create inner balance. She explained the health benefits of Thai ingredients such as how the fruit pomelo can be used to clear the chest and pairs well with coconut, which strengthens the bones, and chilies, which aid circulation. She also described how all traditional Thai cuisine are designed to create a balance within the body between all four essential elements—earth, water, wind, and fire.

Su-Mei Yu – I got interested in Thai food because I got sent away to America when I was very young and I missed Thai food, I couldn’t eat American food so I started to cook. I was lucky that I was able to come home and learn to cook Thai food from old Thai cooks, who taught me little by little. But my interest in the medicinal side of the food came later. I didn’t understand why Thai food was so complicated with so many tastes and ingredients, and through my many questions, through friends and various doctors I learnt that there are principles and reasons behind why Thai food is what it is today, which is the foundation of our belief in Buddhism and in the natural philosophy that we are like mother nature. So if nature is made with earth, wind, water and fire, so are we. And so if we want to be in god health with nature, we should eat what Mother Nature has produced in our own country and keep ourselves well. I have come to appreciate the wisdom of the Thai people who have worked very hard to create this wonderful cuisine that tastes so good, and at the same time keeps us healthy and well.

This Thai food we’ve had today was very nice, and it was interesting to hear about the history and philosophy of what we should combine to make us feel better. I love all the Thai soups and Pad Thai Goong, and all the curries, especially the red curry.

This course today was absolutely fascinating; Su-Mei Yu has a perspective on the food and medicine that has taught us so much and is very valuable for all of us and I think we will all think about this a lot when we go home. My favourite Thai food has to be Yam Wun Sen, the noodle dish!

Although I’m Thai this course has taught me something very different about our food, I have learnt that Thai food uses the four elements and that Thai herbs have great medicinal use. My all time favourite dish is without doubt Pad Ka Praw!
