Welcome Our new Executive Chef Indochine Phuket

On 1st June 2011 IndoChine Phuket held a media event to introduce their new executive chef, Stuart Hickmann, at a meet and greet / food tasting at their Deli Café, Kalim Beach.
The afternoon included an opportunity to meet Stuart and sample dishes from the all day gourmet dining menu and wines from around the world. Stuart Hickmann, Executive Chef at IndoChine Phuket
Stuart served his Chef’s apprenticeship on the Sunshine Coast under a classically trained French Chef.  After graduating with Honours six months early, he took over the head Chef position at a live seafood restaurant on the beautiful Queensland coast.

In the subsequent years he worked extensively throughout the tropical resort islands of Far North Queensland, the Great Barrier Reef and created the finest fare for many private clients aboard their luxury yachts.

It was then time to extend his skills and experience by working in some of the finest restaurants around Europe. He worked in Spain for two years and ran a successful restaurant in Andorra for the following six years where he developed his knowledge of French, Mediterranean and Modern Australian cuisine.

In 2010, he came for a holiday to Thailand and the greater Indo-Chinese peninsula.  By chance he met the Ma family and was invited to prepare food for special IndoChine events including Christmas, New Years Party and the 2011 Pimex Boat Show at Royal Phuket Marina.  This journey was inspirational and the catalyst for his decision to accept IndoChine’s offer to return as Executive Chef of IndoChine Phuket.

His food philosophy is simple; he always source and use the freshest local produce and ingredients which ensures a delicious, healthy and memorable gastronomic experience.  Honesty and integrity in his kitchen’s approach is paramount, as is adapting and creating flavours to suit the clientele.
