Signature dish: Baked Fillets of Sole and Steamed Langoustines. Large dover sole fi llets baked in olive oil with finely chopped Garlic cloves. Langoustines steamed in white wine, brandy, double cream, fish stock and finely chopped fresh parsley. The dish is garnished with finely chopped fresh parsley and served with boiled new potatoes.
