Gai Yang Krueng Gaeng
Grilled chicken with the curry sauce

Gai=Chicken  Yang=Grill  Krueng Gaeng=Curry Paste

I serving



  • Chicken breast and thigh  100 grams
  • Garlic (pound)  1 clove
  • Coriander root (medium size)  1 root
  • Sugar  2 pinchs
  • Soy sauce  1 tablespoon
  • Oyster sauce  1 tablespoon
  • Black pepper  1/2 teaspoon
  • Vegetable oil  1/4 teaspoon


  • Oil  1 tablespoon
  • Coriander seed  1/3 teaspoon
  • Panang curry paste  1 tablespoon
  • Mussaman curry paste  1 tablespoon
  • Chicken broth  1/4 cup
  • Palm sugar  1/2 tablespoon
  • Fish sauce  1/2 tablespoon

Cooking Method

  1. Roast coriander seed on the pan. Grind coriander seed in the mortar and sit it aside (this for SAUCE)
  2. Pound garlic, coriander root, black pepper into paste then add soy sauce and oyster sauce and oil. Rub it all over the chicken in the plastic bag and leave in the fridge over night or a few hours before grill.
  3. In sauce pan add Panang curry paste and Mussaman curry paste then coriander seed (No.1) stir on loe heat until fragrant is devellop.
  4. season with fish sauce and palm sugar Add chicken broth
  5. Reduce until get a thick sauce
  6. Grill the chicken until medium well then brush with sauce, continue on strove till well cook
