Passion fruit & Banana TartPassion fruit & Banana Tart Sugar crusted, Tahitian vanilla clotted cream, butterscotch sauce

Ingredient Filling: Serve6

  • 3  eggyolks
  • 2  egg
  • 15  0g passion fruit juice
  • 1  orange zest/juice
  • 15  0ml cream
  • 15  0g sugar
  • 1  banana-slice
  • 1  tsp. brown sugar

Clotted cream: Serve 6

  • 250  ml whipping cream
  • 75  ml sour cream
  • 1  vanilla pod
  • 1  tbsp icing sugar
  • Butter scotch sauce: Serve 12
  • 160  ml whipping cream
  • 150  gms demerara sugar
  • 50  gms unsalted butter
  • 1  vanilla pod
  • Sweet pastry for tart

Ingredients: Serve 6

  • 250  g flour
  • 100  g butter
  • 100  g icing sugar
  • Pinch of salt
  • 2  eggs
  • Baking paper
  • 200  g ms rice

*Roll the pastry flat to 3mm thick and divide into 6 round tarts. Put the greaseproof paper and rice to stop them for rising. Bake in the oven till golden brown.

Add the passion fruit filling and bake for 45mins at 350degrees F. Cool down and add the slices of sweet banana on top of the custard, sprinkle with brown sugar and caramelized.

Presentation:

Serve with butter scotch sauce, quenelles of clotted cream, fresh passion fruit pulp, berries and mint leaves
