Recipes – Pork Stew (Moo Hong) Phuket-style

Serves 4 to 6 people


  • 1 kg of pork shoulder
  • 7-8 cloves of garlic
  • 1 tsp of peppercorns
  • 2 tbs dark soy sauce
  • 2 tbs medium soy sauce
  • 1 tbs plum sugar (or demerara brown sugar)
  • ¼ cup of milk
  • Sprig or two of coriander (for garnish)


Cut pork shoulder into 2-inch cubes or chunks Grind the garlic and peppercorns and mix together with the dark and medium soy sauce, milk and sugar and pour over the pork chunks. Mix well.

Leave refrigerated for 12 hours and remove when ready to cook.

Method for cooking the pork stew

Place marinated pork in a strong stewpot on the stove at medium heat until cooked through then simmer for two hours. (If pork appears too dry, add two-three teaspoons of water).

To serve

Present pork stew in serving dish garnished with coriander and serve with either boiled rice or mashed potatoes and vegetables of your choice.
