Tod Man Talay
Deep-Fried Seafood Cakes

Ingredients

  • 50 grams minced prawn
  • 50 grams minced fish
  • 50 grams minced squid
  • 1 teaspoon red curry paste
  • 1 teaspoon egg yolk
  • Oil for deep-frying
  • 1 teaspoon sweet basil
  • 1 teaspoon kaffir lime leaves
  • 1 teaspoon fish sauce
  • 1 teaspoon oyster sauce
  • 1/2 teaspoon sugar

Preparation

  • Combine minced fish, prawn and squid well with red curry paste, sweet basil and kaffir lime leaves.
  • Add egg yolk and mix well. Season with fish sauce, sugar and oyster sauce.
  • Shape a small portion of the mixture into a ball, flatten it and fry until golden.
