Chef Rosario Seminatore – Cucina Italian Restaurant JW Marriott

Mr. Rosario Seminatore – An Italian citizen who is fluent in French, English and Italian, joined JW Marriott’s culinary team from his previous position at Four Seasons Hotel, Riyadh in Saudi Arabia where he served as Chef Manager, leading the whole kitchen brigade. Chef Seminatore takes great pride in using quality ingredients to make delicious Italian recipes full of flavour. His career spans back to 1983 where his culinary passion for Italian cuisine began as Commis Chef at Cacciatori Restaurant in Caselle Torinese, Italy. From here, Chef Seminatore broadened his horizons taking key positions across Europe, Asia, Africa, the Americas and the Middle East. JW Marriott Phuket Resort & Spa are proud to have Chef Seminatore as their Italian Chef in Cucina, bringing authentic tasting Italian food to Cucina Restaurant with an enticing new menu that reflects Italy’s culinary traditions.

How and when did you become interested in cooking?

This was a very long time ago. Even before I started my graduation I liked discovering and trying new combinations of flavours. I use to follow my mother when she was cooking. She would explain to me how dishes were prepared and I took great interest in this.

How did become involved with JW Marriott?

I only took this position very recently. I had heard that JW Marriott was the best chain of hotels to work for, and some people told me that there was a good vacancy here which I might be interested in. Therefore, I sent my resume to them and here I am today. I’m so happy about this position as I think I can learn so much more, and they are allowing me to experiment with my dishes, which is fantastic for me.

What has been your main task since joining?

The main reason I’m here is to bring this fantastic Italian restaurant to the next level. We have started bringing in a lot of Italian products which were previously not available, and we will now be able to use these on the new menu which will be introduced very soon.

How does Cucina compare now to when you joined?

Before I joined the food offered at Cucina was basic Italian food. It was the popular dishes that everybody was asking for. However, we want to take it a step up and offer better quality dishes. I am currently doing a lot of training and explaining to the staff what they can improve with regards to the use of local and imported ingredients. I’m lucky to have good young staff that are willing to learn to new things.

Are there still changes that you wish to make at Cucina?

I’m now starting to concentrate on the desserts and the breads. Plus we are going to introduce one special night which I believe will be very popular. This night will be called “Pasta Mania” and diners will have a choice of pasta dishes, pizza and cold buffet. There will be an endless combination of dishes which diners can make, choosing from a huge variety of pastas and sauces. People will be able to eat however much they choose of any of the items offered. This night will start in December and I highly recommend people to come and try it out.

Why should people choose Cucina to dine at?

I firmly believe that people need personlised service and food. It’s not difficult to find Italian food in Phuket but if they come to Cucina and taste our food they will realise they are receiving something more. If you come here with your family or with a business associate we will make sure that everything is personalised to how you want it to be. Our menu is like a guideline, if there is anything people want that falls outside of this we will be happy to prepare it for you. I am also more than happy to make recommendations to anyone who comes to dine at Cucina.
