‘Italian Chef Silvano Amolini’ Executive Chef of Dusit Thani Laguna Phuket

Chef Silvano AmoliniCould you introduce yourself?

My name is Silvano Amolini, the Executive Chef of the Dusit Thani Laguna Phuket. I am originally from Lake Como and now lead a team of 60 kitchen staffs at our flagship resort.

It is a great pleasure to come back to the resort here in Phuket. I first joined the resort in September 1993 as the Junior Sous Chef and now return as the Executive Chef, managing our five signature restaurants. I try to bring a fresh approach to each, with classical and modern dishes at the award-winning La Trattoria, the freshest seafood on the island at our beach front Casuarina Beach restaurant, and freshly picked herbs and ingredients from the Laguna Phuket garden for Ruen Thai, our classic Thai restaurant. My experience with top quality food preparation and hotel catering ensures the highest standards and a world class reputation.

I realised my passion for food at the age of 12 and have spent the last 25 years in some of the world’s top ranked restaurants, including Splendido Portofino in Genova, and Amari Boulevard & City Lodges in Bangkok.  Since returning to the Dusit Thani Laguna, Phuket I have earned the most desired Chef accolades from honored guests in November 2009.

I developed my unique style while earning my certificate from the Professional School of Cooks at Chiavenna, Italy from 1983 to 1986. I embrace local produce and work with neighbouring farmers to select the finest local ingredients. In addition to cooking, I believe in the continuous development of local people and continue to share my knowledge and experience with young and aspiring Thai professionals to develop their talent

Have you ever done another job before?

I fall in love with cooking so the answer is “No”.

How come you become to chef?

I was introduced to this beautiful profession at the age of 12 by my father, Executive Chef in Switzerland. During my summer vacations, I went and helped him with some basic cookery jobs and then I realized that this would be what I would like to do for my career.

Which menu styles are you strong in, why?

When you become Executive Chef you must have a strong knowledge of many cuisines, however, being Italian guy make me love to cook the Italian food.

What’s your inspiration in your working?

Always try to exceed guests, management and staff expectations by working hard, be straight, be a good and fair with my Team, be a role model and eventually an inspiration for the new coming generation of Cooks. I like our DUSIT BRAND CREDO that states WE DON’T JUST DO IT BUT WE DO IT WITH PASSION!! I think that says it all.

What’s your favorite dish?

I have many but not one in particular.

In your opinion, what does it mean “cooking”?

Cooking means, to take a natural product like a potato and transform it in to something amazing, beautiful, tasty and eventually create an emotion.

Finally, could you say something to who wants to be chef same as you?

You must truly have a profound passion and love for the profession, if you have that you can receive a lot from it and have fun.
