Last Friday evening Indigo Pearl hosted a spectacular showcase dinner for the Phuket Chapter of the prestigious, international gastronomic society ‘La Chaine Des Rotisseurs’. Thirty members and hospitality professionals, including Thailand chapter president Mr Joe P Thawilvejjakul, Khun Prakaikaew Na-Ranong, Indigo Pearl’s Deputy Managing Director and Mr. Kelly Lewis, General Manager of Indigo Pearl, attended the culinary event.
The Rivet Grill’s Executive Chef Appadoo Pravesh and Executive Sous Chef Robert Kirk created the ‘Voyage autour des 5 continents’ degustation menu especially for the evening.
Expertly paired with some of the finest wines from across the globe, the nine courses were designed to journey the taste buds through sour, bitter, salty and sweet flavour experiences, whilst evoking and exciting the five senses.
Interspersed with palate cleansers such as ‘nitro’ orange sorbet with Thai basil air and kiku massuna sake, two of the tantalising dishes included:
Hot smoked blue fin tuna, lemon jam, ponzu-marinated seaweed with sour cream and pickled ginger sorbet
Accompanied by Cloudy Bay Chardonnay 2009, New Zealand
Roasted squab with fricassée of globe artichoke, chantrelles, fava beans and jus natural
Served with Mendoza Domino Del Plata, Nosotros Malbec 2008, Argentina
La Chaine Des Rotisseurs Thailand chapter president Mr Joe P Thawilvejjakul shared “the dinner was truly world class and one of the best for Phuket Bailliage. The dinner at Indigo Pearl will be regarded as a bench mark on how a proper Chaine dinner should be organized and we are delighted to have you in our Bailliage.”
