Waterfront Restaurant Mediterranean Menu


IndoChine’s Waterfront Restaurant offers an eclectic and authentic indoor and rooftop dining experience which can be enjoyed in a stylish and comfortable atmosphere whilst enjoying stunning views of Patong Bay. A playful mood meets serious food in the hotel resort’s spectacular centrepiece: a three-storey, glass-walled structure with wrap-around Andaman Sea vistas.

Although IndoChine Group’s delicious, healthy cuisine are renowned throughout Asia as being inspired by Vietnam, Cambodia, Laos and Thailand, their flagship Phuket restaurant, The Waterfront Restaurant’s Executive chef Stuart Hickman has recently added some exquisite Mediterranean dishes to the ever growing menu.

We were lucky enough to have to been invited by Chef Stuart to sample a few of the new dishes he has added to the menu.

Chicken Supreme

When I saw chicken supreme on the menu, I automatically imagined chunks of chicken doused in a creamy white sauce. How wrong I was! This is large cutlets of chicken breast, filled with a combination of prawns, roasted garlic and spinach and served with rosemary roasted new potatoes and a brandy prawn bisque. This dish certainly puts regular chicken supreme to shame.

Cajun Salmon Cutlet

Succulent pan fried salmon fired up with an exciting blend of Cajun spices! The salmon cutlet was cooked to perfection and was absolutely phenomenal on the palate. The roasted Mediterranean vegetables, basil infused polenta wedge and white wine Napoli sauce added a great variety of flavours to this superb dish.

Red Snapper Fillet

This red snapper with its delicate yet distinct taste and its firm, flaky texture is served on a crispy potato and olive cake with fresh, delicately flavoured asparagus with a rich and creamy mushroom beurre blanc sauce. I think this was my favourite dish of the three a great choice of ingredients which each complement each other. This is creation will be hard to beat.

Stuffed Pork Loin

This recipe with Tender pork loin looks impressive and tastes it too. Stuffed with apricot and walnuts the pork loin not only has a great mixture of flavours but also textures. You get a nice blend of sweet and sour from the pickled red cabbage & crisp apple wafers which are complimented with a calvados jus.
